- 擁有二十七年香港酒店業飲食部門工作經驗，並有十九年於香港多間4至5星酒店管理工作，期間一直在機構負責員工培訓工作，尤其在葡萄酒及烈酒 ，調酒及飲食服務方面的培訓。而最後受僱職位是 香港南洋酒店之飲品部及餐務運作經理一職。
- 由於對葡萄酒充滿熱愛, 大文Sir曾前往法國、西班牙及葡萄牙等葡萄酒產區取經, 親身體驗；並擔任香港中文大學、香港高峰(PEAK)進學院、香港工聯會、職業訓練局及香港調酒學校的課程主講導師，將有關葡萄酒的知識發陽光大, 等多些人懂得如何品嚐美酒。
- 大文Sir 現以自由形式擔任葡萄酒與烈酒課程講師、葡萄酒顧問及專欄作者。所有服務均以中文、普通話及英語進行。服務範圍包括葡萄酒及烈酒課程、品酒課程、公司品酒會、葡萄酒與食物配搭晚宴安排、酒牌設計及葡萄酒顧問等。
With twenty-seven years ‘Hong Kong industry experience in the hotel food and beverage sector, nineteen at a management level in four-star and five-star hotels, Damon possesses nineteen years’ food and beverage training experience with specializations in cocktail, wine and spirits training. He is a regular instructor at the Hong Kong Federation of trade Unions Spare Time study Centre, Hong Kong, the Hong Kong Cocktail School, and the Vocational Training Council. Damon is also Founding Committee Member in the Hong Kong Sommelier Association, the china Hong Kong Bartenders’ Association, and the Hong Kong Cocktail School respectively.
